Veggie Fritters
Tierra Tips to Engage your Little Helper:
- Work on your little ones fine motor skills! Squeeze moisture out of zucchini, crack eggs, stir in the vegetables. These all work on grip and movement!
Ingredients:
- 4 cups shredded zucchini
- 4 cups shredded carrots
- 1 ⅓ cups flour
- ⅔ cups chopped scallions (optional, but delicious!)
- 4 large eggs, lightly beaten
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- Salt & pepper
Instructions:
- Pat the zucchini dry (or use a strainer to get rid of excess moisture).
- Combine the zucchini, carrots, flour, scallions, eggs, garlic and salt and pepper in a bowl and stir.
- Off to the side, put paper towels on a plate to set the fritters on once they’re cooked.
- Add some oil into a pan, and pour scoops of the mixture (about ¼ cup) into the pan to cook. Leave space between the scoops so they can cook on their own.
- Once they’ve cooked, you can place them on the paper towels for any excess oil to dry
- Enjoy- pair with a side of fruit and a slice of toast for a well balanced breakfast!
