Salsa Chicken Bake
- Chicken breast, boneless and skinless
- Seasonings: 1/4 teaspoon cumin, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon garlic powder, 1/4 teaspoon red chili pepper flakes
- 2 cups diced tomatoes
- 1/2 cup chopped onion
- 1/3 cup chopped jalapeño
- 1/2 cup fresh chopped cilantro
- 1 cup shredded Mozzarella
- Dice all your veggies
- Cut your chicken into cubes or strips and place in a glass dish
- Season your chicken
- Add the diced tomatoes, onion and jalepeño on top
- Cover with cheese
- Bake at 400˚F for 25 minutes
- Top with cilantro and enjoy! Serve with rice or tortillas on the side!
