Chicken Rice Pilaf

Ingredients:
- 3 1/2 cups rice
- 3/4 cup olive oil
- 2 cups celery, diced
- 1 1/2 cup onions, diced
- Garlic powder, curry powder
- 1/2 cup all-purpose flour
- 6 cups water
- 3 cups plain yogurt
- 2 cups carrots
- Chicken thighs, cooked and diced
- Salt and pepper to taste
- 1 cup cilantro chopped for topping (optional)
Instructions:
- Cook the rice and set aside.
- Sauté the chopped celery and onions
- Lower the heat and add in the yogurt, water and flour.
- Stir the mixture as it thickens and simmers
- Add the chicken and carrots to the rice
- Mix in the yogurt mixture.
- Serve!
